Super Easy Delish Chocolate Chess Pie

THIS AMAZINGLY EASY CHOCOLATE CHESS PIE MAY BECOME PART OF YOUR REGULAR ROTATION!!! (Paleo Version Options)

Ingredients:

1/2 cup butter

3 ounces semisweet or bittersweet chocolate, chopped (I use Enjoy Life Semi-Sweet Mini Chips)

1 cup sugar (I used coconut sugar)

2 eggs, beaten

1 teaspoon vanilla

1 unbaked pie shell (from freezer section) (I use Wholly gluten-free pie crust)

Whipped cream for topping, optional (but tasty!)

Materials Used: bowl, measuring cups & spoons, favorite oven mitts

Preheat oven to 350 degrees F.

Gently melt butter and chocolate in the top half of a double boiler. (I actually just do this in a regular pan being super careful to keep the heat low.)

In a separate bowl, mix together the sugar, eggs, and vanilla. (I just use a spoon.)

Add melted chocolate mixture and stir/mix until well-combined.

Pour mixture into pie shell and bake until set, 30 to 35 minutes (usually takes 40 minutes at least).

Allow to cool (if you can wait that long) and top with whipped cream, if desired.
